Maple Syrup Grades
 
 
Prior to 2015 each state had a Maple Syrup Grading system of its own.
For the first time the United States has developed a uniform Grading system.
Please use this chart for conversion between the old Pennsylvania system and the new US system.
 

IF YOU ALREADY LOVE:

It's all now Grade "A"

LOOK FOR THE NAME:

FIRST OF THE SEASON
Light in color not a lot of Maple flavor.
Best for making cream & candy.
MIDDLE OF THE SEASON
Nice medium color,
excellent table syrup.
LATER IN THE SEASON
Darker in color, more Maple flavor,
also a good table syrup.
LAST OF THE SEASON
Very dark, very strong maple flavor.
Good for cooking, baking and making Maple sugar.
